- Sweet Potato Poblano Salad
- 2 1/4 cups sweet potatoes peeled, diced
- 1/3 cup poblano chili pepper fresh, diced
- 1/3 cup green onion scallion, sliced
- 1/4 cup celery diced
- Dressing
- 2 Tbsp vegetable oil
- 2 Tbsp lemon juice
- 2 Tbsp honey
- 3/4 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/4 tsp ground black pepper
- 1/4 tsp hot pepper sauce

Sweet Potato Poblano Salad
- Cook sweet potatoes covered in ½ inch boiling water until tender. Drain. Chill.
- Combine chilled sweet potatoes, poblano pepper, scallion, celery and dressing.
- Make dressing (see below). Toss to coat. Cover. Keep chilled.
Dressing
- Combine dressing ingredients. Whisk until well blended.
