
Curry Chickpea Burger
A flavorful vegetarian burger packed with protein-rich chickpeas, quinoa, herbs, and aromatic spices. Serve each patty with tzatziki, lettuce, and tomato slices on wholegrain buns.
Ingredients
- 1½ tsp canola oil
- 1½ tsp minced garlic
- 3 Tbsp diced red onions
- ¾ tsp curry powder
- ¾ tsp ground cumin
- ¼ tsp ground cardamom
- ½ tsp ground coriander
- ½ tsp salt
- 2 cups chickpeas rinsed and drained
- 2 eggs lightly beaten
- 1 cup quinoa cooked
- 3 Tbsp green peas
- 1½ Tbsp chopped cilantro
- ½ cup all-purpose flour
- 6 multigrain hamburger buns
- ¾ cup prepared tzatziki sauce
- 6 lettuce leaves
- 12 tomato slices
Instructions
- Preheat oven to 400°F
- In a stockpot over medium-high heat, warm the oil.
- Add garlic, onions, and all the spices. Sauté until the onions are tender and fragrant.
- Transfer the cooked garlic-onion mixture and chickpeas to a food processor. Blend until well combined, but do not puree.
- In a large bowl, mix the chickpea blend with quinoa, eggs, peas, cilantro, and flour. Stir until everything is evenly incorporated.
- Scoop the mixture into equal portions and shape into patties. Flatten slightly for even cooking.
- Quickly sear each patty on the griddle until lightly browned on both sides.
- Transfer to parchment-lined sheet pans and bake until heated through.
- Spread tzatziki on the top half of each bun.
- On the bottom half, layer lettuce, tomato slices, and a chickpea-quinoa patty.
- Add the top bun and serve.
