Smoky Sweet Pepper & Garlic Collard Greens

Smoky, zesty and satisfying, this side dish is a fresh take on traditional collards. Amp up the heat by adding hot pepper flakes or your favorite hot sauce.

Ingredients
- 2 Tbsp olive oil
- 1/2 ea red onion sliced
- 1/2 cup sweet bell peppers diced or thinly sliced
- 3 ea garlic cloves sliced
- 1 bunch fresh collard greens stems removed, leaves cut into bite-sized pieces
- 2 cups vegetable broth low sodium
- 2 Tbsp apple cider vinegar
- 1 Tbsp brown sugar
- 1/2 tsp liquid smoke flavoring
- 1/2 tsp smoked paprika
- Salt and pepper to taste

Instructions
- Heat olive oil in a large skillet over medium heat.
- Cook and stir onion, peppers, and garlic until browned and fragrant, about 3 to 4 minutes.
- Add collard greens. Cook and stir until greens are slightly wilted, about 2 to 3 minutes.
- Combine vegetable broth, cider vinegar, brown sugar, liquid smoke flavoring, and smoked paprika in a large pot. Add collard green mixture.
- Cover pot and simmer until greens are tender, about 40 to 50 minutes.
- Strain collard greens before serving and enjoy!
