With its mild flavor and texture like shredded meat, jackfruit has become a great meat alternative. In this recipe, shredded jackfruit gets simmered with onion, spices and citrus juices for a vegetarian take on Mexican carnitas. Use as a taco or sandwich filling.

Ingredients
- 2 Tbsp vegetable or olive oil
- 12 oz canned shredded jackfruit in brine drained
- 1/4 cup onion trimmed and diced
- 1 1/2 tsp ground cumin
- 1 1/2 tsp dark chili powder
- 1/2 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 cup orange juice
- 1 Tbsp lime juice

Instructions
- In stockpot over medium-high heat, heat oil.
- Add onion, jackfruit and spices. Sauté 2-3 minutes.
- Add lime and orange juices. Cook 8-10 minutes until lightly brown and edges are crispy.
