
Citrusy Asparagus with Feta
Perfect for a warm weather side dish or light lunch bite, this asparagus salad features a vinaigrette made with orange juice and zest and gets topped with tangy crumbled feta. Serve with chicken or fish and brown rice.
Ingredients
- 2½ cups asparagus trimmed
- 1 tsp orange juice
- ¼ tsp orange zest
- ½ tsp apple cider vinegar
- ¼ tsp Dijon mustard
- Pinch salt
- Pinch black pepper
- 1 Tbsp + 1 tsp canola oil
- 1 Tbsp green onions sliced
- 2 Tbsp feta cheese crumbled
Instructions
- In a large pot, bring water to a boil. Add the asparagus to the boiling water and cook for 3-5 minutes. Drain
- Rinse asparagus under cold, running water to stop the cooking process. Drain.
- In a blender, combine the orange juice, orange zest, apple cider vinegar, Dijon mustard, salt, and black pepper. Blend until well combined. While blending, slowly add the canola oil to the blender in a steady stream until emulsified. Transfer dressing to a bowl.
- Add green onions to dressing. Whisk until well blended.
- In a large bowl, toss blanched asparagus with prepared dressing to coat. Top with crumbled feta cheese.
- Optional: Add toasted pine nuts for a little crunch.
