
Butternut Squash and Swiss Chard
Colorful and simple to prepare, this side dish features cubes of butternut squash sauteed with Swiss chard and garlic.
Ingredients
- 2 Tbsp extra virgin olive oil divided
- 2 1/4 lb butternut squash peeled, seeded, and diced 1/4"
- 1 1/2 lb Swiss chard trimmed, sliced crosswise 1/8"
- 3/4 tsp kosher salt
- 3/4 tsp ground black pepper
- 2 Tbsp garlic finely chopped
Instructions
- In a large saute pan or stockpot over medium-high heat, heat half of the oil. Add squash. Saute until squash is tender, 4-6 minutes. Remove from pan.
- In the same pan, heat remaining oil. Add garlic. Saute 30 seconds. Add Swiss chard, salt and pepper. Saute until tender, 6-8 minutes.
- Return squash to chard mixture. Toss to mix. Serve hot.
