
Tofu Breakfast Tacos
Soft shell tacos are filled with tofu scrambled with sauteed onions, turmeric, and lemon juice then topped with salsa for a vegetarian twist on a breakfast favorite.
Ingredients
- 4 tsp olive oil
- 1/2 cup onion finely diced
- 10 oz firm tofu crumbled
- 1/4 tsp ground black pepper
- 1/8 tsp ground turmeric
- 1 3/4 tsp fresh lemon juice
- 6 flour tortillas, 6"
- 1/4 cup chunky salsa
Instructions
- Heat oil in sauté pan. Add onion; sauté until translucent, 3 to 5 minutes.
- Add crumbled tofu, black pepper, turmeric, and lemon juice. Sauté 3 minutes.
- Layer 1/6 of tofu mixture across the center of each tortilla. Top with salsa and serve.
- Optional: Top with chopped cilantro, diced avocados, or sliced radishes.
