Tofu Breakfast Tacos
Soft shell tacos are filled with tofu scrambled with sauteed onions, turmeric, and lemon juice then topped with salsa for a vegetarian twist on a breakfast favorite.
Servings 6 tacos

Heat oil in sauté pan. Add onion; sauté until translucent, 3 to 5 minutes.
Add crumbled tofu, black pepper, turmeric, and lemon juice. Sauté 3 minutes.
Layer 1/6 of tofu mixture across the center of each tortilla. Top with salsa and serve.
Optional: Top with chopped cilantro, diced avocados, or sliced radishes.
