Ingredients
- Roasted Squash
- 1 lb acorn squash seeded, cut crosswise into 1" slices
- 2 Tbsp olive oil
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- cilantro garnish
- Crispy Onions
- 1/2 cup red onion trimmed, sliced
- 1 Tbsp olive oil
- Pickled Raisins
- 1/2 cup dried raisins seedless, any color
- 2 1/4 tsp granulated sugar
- 1/4 cup apple cider vinegar
- 1/8 tsp lemon zest from 1 lemon peel
- 2 pinches fresh thyme leaves minced
- 1/4 ea dried bay leaf
- 1/8 tsp kosher salt
- Garlic Yogurt Sauce
- 5.3 oz Greek yogurt, plain, nonfat single serve container size
- 2 1/4 tsp fresh lemon juice from 1 lemon
- 1/4 tsp kosher salt
- 1 1/8 tsp fresh garlic clove peeled, finely minced or grated

Instructions
Roasted Squash
- Preheat convection oven to 375 F. On sheet pan, arrange squash slices. Brush wedges with oil and season with salt and pepper. Bake until squash is fork-tender, 30 to 35 minutes.
Crispy Onions
- Mix sliced onions and oil together and place on baking sheet. Season with a pinch of salt if desired. Bake on lower rack, tossing every 5-10 minutes until brown and frizzled.
Pickled Raisins
- Combine all ingredients. Toss to coat. Let stand 2 hours or overnight. Drain and reserve pickled liquid if desired - see recipe note below.
Garlic Yogurt Sauce
- In a mixing bowl, combine yogurt, minced garlic, lemon juice and salt. Whisk until well blended.
For 1 Serving:
- On serving plate, place 2 pieces of squash, top with 2 Tbsp Garlic Yogurt Sauce, 2 Tbsp Pickled Raisins, 2 Tbsp Crispy Onions and garnish with cilantro.
