- 6 oz 100% pure ginger juice see recipe note below
- 4 oz drained juice from Pickled Raisins see recipe note below
- 3 oz maple syrup
- 1/2 oz fresh lemon juice
- 28 oz water or club soda preference
- 1 ea fresh thyme sprig garnish
- 1 ea Pickled Raisin garnish, see recipe note below

- Combine ginger juice, pickling liquid, maple syrup and lemon juice into a large container.
- Stir until maple syrup is dissolved. Chill until cold.
- To serve, dilute with water or club soda and pour Haymaker into ice-filled glass. Garnish with fresh thyme and a few pickled raisins.
Ginger beer can be used as a replacement to ginger juice. Use less maple syrup if using ginger beer to prevent an overly sweetened drink. Get the Pickled Raisin brine from Chef Jules' Roasted Squash & Frizzled Onions recipe.
