Ingredients
- 1 tsp olive oil
- 1/2 cup yellow onion trimmed, diced
- 1 cup frozen cranberries
- 1 cup dried fig sliced
- 1 cup dried raisins seedless
- 1 cup light brown sugar
- 1 cup orange juice
- 1/2 cup water
- 1/2 cup cider vinegar
- 1/2 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1/2 tsp whole mustard seed

Instructions
- In stockpot over medium-high heat, heat oil. Add onion. Sauté until onion is tender-crisp , 2 to 3 minutes.
- Add all remaining ingredients. Stir. Bring to a boil. Reduce heat. Simmer until most of the liquid has evaporated, 11 to 13 minutes. Remove from heat.
- In blender or food processor, place cranberry mixture. Puree mixture until smooth, 1 to 2 minutes. Cool.
- Cover. Refrigerate and keep chilled. Enjoy as a spread on your favorite bread!
