yellow onion
trimmed, diced

cup
frozen cranberries

cup
dried fig
sliced
1
cup
dried raisins
seedless

cup
light brown sugar

cup
orange juice
1/2
cup
water
1/2
cup
cider vinegar
1/2
tsp
kosher salt
1/2
tsp
ground cinnamon
1/2
tsp
whole mustard seed
Instructions
In stockpot over medium-high heat, heat oil. Add onion. Sauté until onion is tender-crisp , 2 to 3 minutes.
Add all remaining ingredients. Stir. Bring to a boil. Reduce heat. Simmer until most of the liquid has evaporated, 11 to 13 minutes. Remove from heat.
In blender or food processor, place cranberry mixture. Puree mixture until smooth, 1 to 2 minutes. Cool.
Cover. Refrigerate and keep chilled. Enjoy as a spread on your favorite bread!
