  1. In stockpot over medium-high heat, heat oil. Add onion. Sauté until onion is tender-crisp , 2 to 3 minutes.
  2. Add all remaining ingredients. Stir. Bring to a boil. Reduce heat. Simmer until most of the liquid has evaporated, 11 to 13 minutes. Remove from heat.
  3. In blender or food processor, place cranberry mixture. Puree mixture until smooth, 1 to 2 minutes. Cool.
  4. Cover. Refrigerate and keep chilled. Enjoy as a spread on your favorite bread!
