
Autumn Pecan Power Bites
A nutritious mix of pumpkin, pecans, cinnamon, oats, chia seeds, and yogurt rolled into tasty, bite-sized snacks.
Ingredients
- 1½ cups pitted dates chopped
- ¼ cup + 2 Tbsp chia seeds
- ½ cup + 2 Tbsp quick oats
- ½ cup raw pecans chopped
- ½ cup nonfat plain Greek yogurt
- ½ cup canned pumpkin puree not pumpkin pie filling
- 1¼ tsp ground cinnamon
- ½ tsp kosher salt
Instructions
- Preheat oven to 325° F.
- On a sheet pan, spread pecans in thin layer.
- Bake, stirring once, until lightly toasted and aromatic, about 7 to 10 minutes. Cool.
- In a food processor, process dates until finely chopped.
- In a large bowl combine all ingredients. Mix until ingredients are well incorporated and stick together.
- Using a small cookie dough scoop, portion mixture into balls. Roll smooth. *
- Cover and chill until ready to eat.
Notes
*Notes: If the mixture sticks to your hands while rolling, spray your hands lightly with oil before rolling. Energy bites can be stored in the fridge in an airtight container for up to a week. You may also freeze some for future consumption.
