- 1 1/2 lbs sweet potatoes (about 3 large)
- 1 cup canned roasted red peppers drained
- 1/3 cup lemon juice fresh or refrigerated
- 1 teaspoon ground cumin
- 1 teaspoon garlic peeled and minced or grated
- 1/2 teaspoon salt
- Dash ground cayenne pepper

Instructions
- Preheat oven to 400⁰F.
- Prick sweet potatoes with fork. Place on oven rack. Bake until fork tender, about 45 minutes. Cool slightly and remove skins.
- In food processor, combine all ingredients. Process until smooth (add a little water if it’s too thick). Place in serving dish and sprinkle with black sesame seeds or chopped fresh parsley. Cover and refrigerate until ready to serve.
