Minced cauliflower replaces bulgur in this traditional Middle Eastern salad with fresh tomato, parsley, scallions and lemon.

Ingredients
- 1 lb. cauliflower cut into 1-inch pieces *
- 1 large tomato cored and diced 1/4 inch
- 3 Tbsp parsley (Italian) flat-leaf, chopped
- 3 Tbsp extra virgin olive oil
- 3 Tbsp lemon juice
- 2 - 3 green onion trimmed and thinly sliced
- 3/4 tsp kosher salt
- 1/8 tsp ground black pepper
- 1 clove garlic peeled and minced

Instructions
- Place cauliflower pieces in food processor; pulse until finely minced (pieces will resemble rice).
- In bowl, toss cauliflower with remaining ingredients. Cover and keep chilled for service.
