Cauliflower Potato Mash

Swap out your conventional recipe for this combo of mashed potatoes and cauliflower florets seasoned with salt and pepper.
Ingredients
- 1 1/2 cup potato peeled and diced (~1")
- 1 1/2 cup cauliflower diced (~1")
- 1/2 Tbsp butter
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 Tbsp chives or to taste

Instructions
- Steam potatoes and cauliflower. Using a vegetable steamer, add 1-2" water to bottom of pot. Insert steamer. Add veggies. Bring to boil and steam until fork-tender, 20-25 minutes. Drain.
- In mixer bowl with paddle attachment, beat potato cauliflower mixture on low speed until smooth, 2 to 3 minutes.
- Add butter, salt and pepper. Mix until well blended. Do not overmix.
- Garnish with chives.
