Ingredients
- 2 1/2 lbs carrot trimmed, cut into 1" pieces
- 1/2 cup tahini paste
- 1/2 cup lemon juice
- 1/2 cup extra virgin olive oil
- 1 1/2 tsp garlic cloves peeled, minced
- 2 tsp kosher salt
- 1 Tbsp toasted sesame seeds see instructions below

Instructions
Toasted Sesame Seeds
- Preheat convection oven to 300 degrees F.
- On sheet pan, spread sesame seeds in thin layer.
- Bake, stirring once, until lightly toasted and aromatic, 10 to 12 minutes. Cool.
Carrot Sesame Hummus
- Heat water in pot on stove.
- In metal strainer or colander, steam carrots over boiling water until soft, 20 to 25 minutes. Drain. Chill.
- In food processor, combine cooked carrots, tahini paste, lemon juice, olive oil, garlic and salt. Process until smooth.
- Combine carrot mixture and toasted sesame seeds. Mix well.
- Serve with fresh cut vegetables or pita bread.
