
Breakfast Quesadilla
Start your day off right! Fluffy scrambled eggs, sauteed eggs and peppers, cheese, and salsa are folder into tortillas and baked to golden, crispy perfection in the oven.
Ingredients
- 1 ¼ tsp canola oil
- ⅓ cup sliced yellow onions
- ⅓ cup sliced sweet peppers of your choice
- pinch ground black pepper
- pinch salt
- 5 eggs
- 3 tortillas
- ¾ cup cheese shredded
- 1/3 cup prepared salsa
Instructions
- Preheat oven to 350°F
- Heat canola oil in a pan and sauté sliced peppers and onions 3–5 minutes until tender. Remove from pan and set aside. Wipe pan with a paper towel.
- Whisk eggs with salt and black pepper until well blended.
- Spray saute pan with nonstick cooking spray. Add scrambled eggs to the pan and cook 2–3 minutes, stirring occasionally, until eggs are set but soft.
- On parchment-lined baking pan, place tortillas and layer on bottom half of the tortilla the scrambled eggs, sautéed peppers and onions, shredded cheese, and salsa. Fold tortilla over filling and press down a little.
- Bake 10–12 minutes until tortillas are golden brown and cheese is melted.
- Cut each quesadilla into 4 wedges and serve (2 wedges per serving).
