Cumin-Spiced Grilled Carrots

Ingredients
- 1 1/2 lbs fresh carrots peeled and cut into sticks
- 2-3 green onions washed and trimmed, scallions
- 1 Tbsp lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp ground cumin
- 1/4 tsp ground black pepper
Instructions
- In pan or steamer basket, steam carrots until tender-crisp, 8 to 10 minutes. Rinse with cold water to stop the cooking process. Drain.
- Get grill very hot. Add carrots and scallions to pan until grill marks form and vegetables are heated through, 2 to 3 minutes on each side. Cut scallions into 1-inch pieces.
- Toss hot vegetables with remaining ingredients.
