
Chocolate Citrus Energy Bites
A nutritious mix of dried dates, orange juice, coconut, cashews, and chia seeds covered in cocoa.
Ingredients
- 12 oz pitted dried dates chopped about 2 cups
- 1/4 cup orange juice
- 4 1/2 oz roasted cashews, unsalted finely chopped
- 2 Tbsp sweetened flaked coconut
- 1 Tbsp chia seeds
- 1 1/2 Tbsp baking cocoa
- 1 1/2 Tbsp baking cocoa
Instructions
- In food processor, place dates and orange juice. Process until finely chopped.
- In mixer bowl with paddle attachment. combine date-orange mixture with cashews, coconut, chia seeds and first amount of cocoa. Mix until ingredients are well incorporated.
- Using a tablespoon, portion mixture into balls. Roll smooth with hands.
- Roll bites in second amount of cocoa powder.
