Ingredients
- Chicken Breast
- 4 each boneless skinless chicken breasts cut into 1" cubes
- Marinade
- 2/3 cup peanut butter
- 4 Tbsp peanut oil
- 1/2 cup onion chopped
- 2 Tbsp garlic minced
- 2 Tbsp lemon juice
- 1 Tbsp ginger
- 1 Tbsp curry powder
- 1 tsp low sodium soy sauce
- 1/4 tsp ground cayenne pepper

Instructions
- Combine all marinade ingredients into food processor or blender and mix until smooth.
- Add cubed chicken to marinade at safe temperatures for 3hrs or up to overnight.
- Skewer marinade chicken on metal or wooden skewers*.
- Grill or bake at 400°F for approximately 15 minutes or until internal temperature reaches 165°F.
- Garnish with fresh chopped cilantro if desired.

*Soak wooden skewers in warm water for 20 minutes to prevent wood from burning.
