
Broccoli, Mushroom and Black Sesame Salad
Steamed fresh broccoli florets and sliced white button and shiitake mushrooms are tossed with a dressing made of rice vinegar, sesame oil, ginger, garlic, and soy sauce, then sprinkled with chopped chives and black sesame seeds.
Ingredients
- 9 oz fresh broccoli florets approx. 2.5-3 cups
- 2 1/4 tsp sesame oil
- 1 1/2 Tbsp low sodium Tamari soy sauce
- 3/4 tsp fresh garlic peeled and minced
- 1 1/2 Tbsp seasoned rice vinegar
- 1 cup fresh white button mushrooms sliced 1/8"
- 1/3 cup fresh shiitake mushrooms stems removed, sliced 1/8"
- 1/2 oz fresh chives sliced into 1" pieces
- 3/4 tsp whole black sesame seeds
Instructions
- In boiling water or steamer basket, blanche broccoli florets for 1 to 2 minutes until color turns bright green. Do not overcook. Chill immediately in ice water bath. Drain well.
- In mixing bowl, add sesame oil, soy sauce, garlic, sesame seeds and rice vinegar. Whisk until well blended.
- Combine chilled broccoli, sliced mushrooms, chives, black sesame seeds, and dressing. Toss to coat. Serve or keep chilled until ready to use.
