Ingredients
- 2 medium fresh red beets peeled and diced 1/2"
- 1 can (15 oz.) garbanzo beans (chickpeas) rinsed and drained
- 5 Tbsp tahini paste
- 1/4 cup fresh lemon juice
- 3 Tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp fresh garlic peeled and minced (or to taste)

Instructions
- Place diced beets in steamer basket/pan. Steam until fork-tender, 40 to 45 minutes. Drain.
- In food processor, combine cooked beets and remaining ingredients. Process until smooth.
- Cover. Keep chilled for service.
