A Southwest-style tomato sauce spiced with jalapenos, cumin, chili powder and oregano. Add it to eggs or cooked brown rice, spread it on sandwiches or burritos, and toss it with cooked vegetables.

Ingredients
- 1 1/2 tsp vegetable or olive oil
- 1/4 cup fresh green pepper seeded and diced
- 1/4 cup fresh onion trimmed and diced
- 2 Tbsp fresh celery trimmed and diced
- 1/2 Tbsp jalapeno chili pepper seeded and minced
- 1 clove garlic peeled and minced
- 1/4 cup low sodium vegetable broth
- 3/4 cup canned diced tomatoes in juice
- 1/2 cup canned crushed tomatoes
- 1/2 bay leaf
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp dried oregano

Instructions
- In saute pan over medium-high heat, heat oil. Add green pepper, onion, celery, jalapeno and garlic. Saute until vegetables are tender-crisp, 2 to 3 minutes. Stir in broth.
- Add remaining ingredients. Bring to a boil. Reduce heat. Simmer until vegetables are tender, 5 to 6 minutes. Remove bay leaf.
- Cover. Keep hot for service or use as directed in recipe.
