Ingredients
- 1 cup white onion diced
- 2 Tbsp fresh garlic diced
- 1 1/2 cups fresh clam meat diced
- 1/2 cup clam juice reserved or canned
- 3/4 cup Pecorino cheese grated
- 1 Tbsp fresh lemon juice
- 1/2 tsp tabasco sauce optional
- 1/2 tsp fresh oregano
- 1 Tbsp fresh parsley
- 1 tsp fresh thyme
- 1 tsp cracked black pepper
- 3/4 cup whole grain cracker crumbs

Instructions
- Pre-heat oven to 350 degrees
- In a warm skillet, sweat the onions and olive oil until translucent, then add the garlic
- Cook for 1 minute and then add clams and clam juice
- Once incorporated, add the lemon juice, fresh herbs, and black pepper. Cook for 2 minutes on medium heat
- Add Pecorino cheese and cracker crumbs. Mix until evenly incorporated. Taste and season.
- Coat a baking dish with olive oil and place clam mixture in evenly
- Bake at 350 degrees for approximately 30 minutes or until the crust and sides are golden brown
- Serve warm with fresh vegetables and crackers
