
Banana Bread Energy Bites
With bananas, toasted walnuts, oats, dates, and peanut butter, these naturally sweet energy bites make a great snack or quick breakfast on-the-go.
Ingredients
- ½ cup walnuts
- ½ cup pitted dates cut
- 1 cup quick oats
- ½ cup smooth peanut butter
- 1 medium banana peeled and sliced
- ¾ tsp vanilla extract
Instructions
- Preheat oven to 325° F.
- On a sheet pan, spread walnuts in a thin layer. Bake, stirring once, until lightly toasted and aromatic, 7 to 10 minutes. Cool.
- In food processor, process dates until finely chopped. Add remaining ingredients. Pulse until well combined.
- Using a tablespoon, portion mixture into balls. Roll smooth. Chill in refrigerator for up to 1 week.
