Pumpkin Spice Blondies

A tasty dessert treat made with beans, pumpkin, maple syrup, and spice.

  • Pre-heat oven to 350°F. Generously coat a mini-muffin pan with cooking spray.
  • Add all ingredients except for the graham cracker crumbs to a food processor. Process until smooth. Transfer batter to a large bowl.
  • Place 1½ Tbsp of prepared batter into each of 24 mini-muffin pans.
  • Top each blondie bite with ¼ tsp of graham cracker crumbs.
  • Bake for 10-12 minutes or until a toothpick inserted in the middle comes out clean.
  • Let cool for 5 minutes. Remove pumpkin spice blondie bites from pan and allow to cool on racks.
