- 12 oz dried dates pitted
- 10 oz chopped walnuts
- 4 oz chia seeds
- 4 oz coconut sweetened, flaked
- 2/3 cup old-fashioned oats
- 1/3 cup baking cocoa 10-13% fat
- 1 tsp pure vanilla extract
- 1/8 tsp kosher salt
- 1/2 cup dark chocolate chips mini-chips work best

- In a food processor, add dates. Puree until smooth paste.
- Add walnuts and mix to combine. Add remaining ingredients until a thick dough forms.
- Shape into 2oz balls. Refrigerate, covered, until chilled. Store leftovers in refrigerator, covered.
Dough can also be made into energy bars. In a parchment lined pan, press mixture into pan, pressing tightly in all corners. Place pan in freezer for 4 hours or overnight. Lift out of container and cut into 4 X 4 portions.
