Trail Mix Cookies

These wholesome treats have nuts, fruits, and seeds baked with whole-grain oats and whole-wheat flour.

Instructions

  • Pre-heat oven to 350°F
  • In a blender, add quick oats. Blend to make flour. Transfer to a large bowl. Add the following: Whole wheat flour, baking soda, salt. Mix until well blended.
  • In another bowl, add the following: Old-fashioned oats, chopped walnuts, poppy seeds, dried cranberries, chopped apricots, sunflower seeds. Mix until well blended.
  • In a bowl or stand mixer, add the following: Canola oil, applesauce, Greek yogurt, honey. Using a paddle attachment, mix on medium high until creamy.
  • Then add the egg and mix on a low speed.
  • Add vanilla and mix until well blended.
  • Add flour mixture and mix on low speed until uniform.
  • Add oats mixture and mix on low speed until uniform
  • Drop by heaped tablespoons onto parchment-lined sheet pans, 2 inches apart. Press cookies to 1/2 inch thickness. Bake 12-15 minutes.
  • Let cool for 5 minutes then remove from baking sheets.
