Banana Pumpkin Mousse

Banana and pumpkin pureed with creamy thick yogurt, honey, cinnamon, ginger and nutmeg.

Instructions

  • In blender, process banana on medium speed until smooth, 2-3 minutes.
  • Add remaining ingredients. Process 1 minute. Scrape down sides of blender. Process until well blended, 1 minute.
  • Scoop 1/2 cup of mousse into serving cup or small bowl. Serve with a dollop of low-fat vanilla yogurt and chopped nuts if desired.

Notes

*For an even thicker consistency, strain the Greek yogurt through several layers of cheesecloth over a colander.
