In a blender, add quick oats. Blend to make flour. Transfer to a large bowl. Add the following: Whole wheat flour, baking soda, salt. Mix until well blended.
In another bowl, add the following: Old-fashioned oats, chopped walnuts, poppy seeds, dried cranberries, chopped apricots, sunflower seeds. Mix until well blended.
In a bowl or stand mixer, add the following: Canola oil, applesauce, Greek yogurt, honey. Using a paddle attachment, mix on medium high until creamy.
Then add the egg and mix on a low speed.
Add vanilla and mix until well blended.
Add flour mixture and mix on low speed until uniform.
Add oats mixture and mix on low speed until uniform
Drop by heaped tablespoons onto parchment-lined sheet pans, 2 inches apart. Press cookies to 1/2 inch thickness. Bake 12-15 minutes.
Let cool for 5 minutes then remove from baking sheets.
