  1. Combine ginger juice, pickling liquid, maple syrup and lemon juice into a large container.
  2. Stir until maple syrup is dissolved. Chill until cold.
  3. To serve, dilute with water or club soda and pour Haymaker into ice-filled glass. Garnish with fresh thyme and a few pickled raisins.
Recipe Notes

Ginger beer can be used as a replacement to ginger juice. Use less maple syrup if using ginger beer to prevent an overly sweetened drink. Get the Pickled Raisin brine from Chef Jules’ Roasted Squash & Frizzled Onions recipe.
