Add onion slices to a pan with red wine vinegar. Simmer until liquid is absorbed and onions are tender and bright pink, about 6 minutes. Cool and drain
Spicy Hummus Ciabatta
Spread 3-4 Tbsp hummus on cut side of 1 ciabatta bottom
Layer the following on top: 2 slices tomato, 3 slices avocado, 2 T pickled red onions, a few cilantro leaves.
