Bran Flax Muffins

Perfect for breakfast or a snack, these muffins are moist and flavorful with a mix of whole grains, flax, apples, carrots, and a touch of cinnamon. Recipe courtesy of Bob's Red Mill.

Instructions

  • Preheat oven to 350°F. Mix together dry ingredients in a large bowl.
  • Stir in carrots, apples, raisins (if desired) and nuts. Combine milk, eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened, but do not overmix.
  • Coat 12 muffin cups with nonstick cooking spray. Fill each muffin cup ¾ full with batter. Bake for 15-20 minutes, until a toothpick inserted in the center of one comes out clean.
