Perfect for breakfast or a snack, these muffins are moist and flavorful with a mix of whole grains, flax, apples, carrots, and a touch of cinnamon. Recipe courtesy of Bob's Red Mill.
Preheat oven to 350°F. Mix together dry ingredients in a large bowl.
Stir in carrots, apples, raisins (if desired) and nuts. Combine milk, eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened, but do not overmix.
Coat 12 muffin cups with nonstick cooking spray. Fill each muffin cup ¾ full with batter. Bake for 15-20 minutes, until a toothpick inserted in the center of one comes out clean.
