
Savor the Season
The bounty of fruits and vegetables that are available this time of year is wonderful. At roadside stands, farmers’ markets, and sometimes in your (or your neighbor’s) backyard, summer produce is everywhere!
Now is the time to get focused on enjoying the best of the season. Here are a few great tips and recipes.
Tomatoes and Cucumbers
With fresh, ripe tomatoes and crunchy cucumbers, you can whip up any number of summer classics. Toss them with feta and ripe olives for a Greek salad (or turn it into a pita sandwich). Add them to toasted barley and fresh basil for a refreshing summer side salad. Even if they’re slightly imperfect, they’ll still make a delicious, chilled gazpacho.
Fresh Herbs
Toss fresh basil and tomatoes with whole-wheat penne for this easy pasta dish. Or make a refreshing beverage like Mango Honey Basil Sparkler. Got fresh mint? Make raita or zip it up in this Mint Chocolate Chip Smoothie. Fresh parsley? Try classic, no-cook sauces like Mediterranean gremolata and South American chimichurri.
Peaches
It’s no wonder August is National Peach Month! At their peak this time of year, juicy peaches are great on their own as a snack or dessert. Or you can chop them into a sweet and zesty Peach Salsa, puree them into Peach Agua Fresca, or grill them and toss them in a tasty salad.
