Ingredients

Instructions

  • Place the frozen berries in heavy bottom Dutch oven or stock pot.
  • Simmer on low for 2-3 hours, stirring occasionally.
  • Mash berries or use and immersion blender to get desired consistency. Be sure to keep some texture by not blending to a completely smooth consistency.
  • Finish with honey or maple syrup. Add sweetener until desired sweetness. Stir to combine.
  • Add a sprinkle of salt to finish.
  • Store in the refrigerator for up to two weeks or eat warm right after preparation.

Notes

Recipe courtesy of Aramark Chef Toni Thomas. "Wojapi can be used as a sauce or jam. It's delicious as a base ingredient as well. I add chipotle in adobo and use it as a BBQ sauce. It can also be used in addition to a reduced red wine sauce over meat."
Or serve Wojapi over Chef Toni's recipe for Corn Mush, a baked cornmeal pudding.
