Gingerbread Cake with Light Cream Cheese Frosting

  • Preheat oven to 350 F.
  • Whisk together the flour, cinnamon, ginger and baking soda in a bowl and hold aside.
  • In a larger bowl, with an electric mixer combine the applesauce, buttermilk, sugar, molasses and egg.
  • Add the flour mixture to the wet ingredients and continue to mix until well combined.
  • Pour the mixture into a prepared 8” square pan.
  • Bake for 25-30 minutes or until the cake is set in the center. Remove from the oven an allow to cool completely.
  • With an electric mixer, beat the cream cheese, margarine, confectioners sugar and vanilla until light and fluffy.
  • Spread the frosting on top of the cooled cake before serving.
