Sometimes called Hasty Pudding, Corn Mush is a cornmeal pudding made with eggs and milk and sweetened with molasses. The mixture gets cooked in the oven in a water bath until firm.

  1. Preheat oven to 325F. Butter a baking dish and set a water bath.*
  2. In a large saucepan over medium heat, add milk and corn cobs. Simmer on low until milk bubbles. Remove corn cobs.
  3. Slowly whisk in cornmeal. Continue to cook at a low simmer until thickened. Stirring regularly.
  4. Incorporate butter until smooth and combined. Remove from heat.
  5. Add sugar and molasses. Stir until combined.
  6. In a separate bowl combine flour, baking powder, and salt.
  7. Add flour mixture until smooth and combined. Add cinnamon if desired.
  8. Pour into buttered dish. Bake in preheated oven in water bath for up to 2 hours, until set.
Recipe Notes

*A water bath is a pan of water placed in the oven.  To use a water bath you simply fill a large enough pan with water, then place the baking dish into the pan of water.  The water should reach about half way up the pan.
