Southwest Sauteed Shrimp
These little bites are easy to make and packed with the flavors of the Southwest. Marinated in a mixture of lime juice, cumin, chili powder, garlic, and other seasonings, the shrimp get sauteed in a hot pan for a few minutes. Serve them hot or chilled on cucumber rounds for an elegant party pick-up.
Named for the savory Greek spinach pie, these mushrooms are stuffed with a mixture that includes spinach, feta, ricotta, fresh dill, and a touch of nutmeg. Once baked, top them with a little prepared tzatziki (cucumber-yogurt-dill sauce) for a taste of the Mediterranean.
Your favorite dip gets a colorful makeover thanks to steamed fresh red beets—or substitute already cooked beets to reduce your prep time! Add the beets, chickpeas, tahini paste, fresh lemon juice, garlic, and olive oil to a food processor and you’ll have a show-stopping, festive dip in very little time.
