Instructions
Maple Dijon Vinaigrette
In a small bowl whisk together the maple syrup, Dijon mustard, cider vinegar, oil, salt and pepper.
Cobb Salad
Assemble each salad by placing 2 ounces of salad greens onto a serving plate.
Top the salad greens with 3 Tbsp cooked squash, 1/2 apple diced, 1/2 avocado diced, 2 Tbsp cranberries, 2 Tbsp chestnuts, 1 1/2 Tbsp blue cheese and 2 ounces shredded cooked chicken.
Serve with 2 Tbsp of Maple Dijon Vinaigrette on the side.
