Ingredients

fresh sweet potatoes
peeled and diced 1/4″

olive or vegetable oil

garlic
peeled and minced

onion
trimmed and diced 1/4″

frozen whole kernel corn
thawed

fresh poblano chili pepper
seeded and diced 1/4″

orange juice

fresh Italian flat-leaf parsley
washed, dried and chopped

red wine vinegar

Instructions
Steam sweet potatoes in steamer basket/pan until tender, 3 to 5 minutes. Drain.
In saute pan over medium-high heat, heat oil. Add onion and garlic. Saute until onion is translucent, 3 to 5 minutes.
Add remaining ingredients, including potatoes. Saute/simmer until poblano pepper is softened slightly and liquid is reduced, 3-5 minutes.
Serve hot.
