Smoky, zesty and satisfying, this side dish is a fresh take on traditional collards. Amp up the heat by adding hot pepper flakes or your favorite hot sauce.

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook and stir onion, peppers, and garlic until browned and fragrant, about 3 to 4 minutes.
  3. Add collard greens. Cook and stir until greens are slightly wilted, about 2 to 3 minutes.
  4. Combine vegetable broth, cider vinegar, brown sugar, liquid smoke flavoring, and smoked paprika in a large pot. Add collard green mixture.
  5. Cover pot and simmer until greens are tender, about 40 to 50 minutes.
  6. Strain collard greens before serving and enjoy!
