
Shrimp and Avocado Toast
Crisp wheatberry toast topped with creamy avocado, zesty lemon pepper shrimp, and a spicy pepper sauce.
Ingredients
- 1 ¾ tsp olive oil
- 10 oz shrimp peeled and deveined
- 2 Tbsp lemon juice
- ¾ tsp ground black pepper
- 6 slices thick wheatberry bread or other multigrain or sprouted grain bread
- 2 cups avocado diced
- 1 ¼ tsp lemon juice
- ½ tsp kosher salt
- ¼ tsp ground black pepper
- 2 Tbsp hot sauce of choice
Instructions
- In sauté pan over medium-high heat, heat oil. Add shrimp. Sauté until shrimp are opaque in center, 6 to 8 minutes.
- Add first amount of lemon juice and pepper. Toss to coat. Cool shrimp in the fridge until ready to use.
- Combine avocado, second amount of lemon juice, salt, and pepper. Stir well.
- Toast bread until golden brown. Spread about 1/3 cup of the avocado mixture on each slice of toast.
- Add ¼ cup of shrimp and 1 teaspoon of hot sauce and serve.
