Instructions
  1. Preheat oven to 400┬░F.
  2. Peel and chop sweet potatoes and set aside.
  3. Combine corn oil, maple syrup, thyme, salt and pepper in a bowl and whisk until well incorporated.
  4. Toss sweet potatoes in mixture and spread out over a parchment lined baking sheet.
  5. Place in oven for 35 minutes, or until sweet potatoes are soft all the way through.
