Ingredients
Grilled Shrimp

shrimp

olive or vegetable oil

Zoodle Bowl

tsp
olive or vegetable oil
1-2
cloves
garlic
peeled and minced
14
ounces
zucchini spirals
1
cup
grape tomatoes
cut in quarters
2
cups
fresh spinach
julienne
1
cup
low sodium vegetable broth
Instructions
Grilled Shrimp
Combine shrimp, first amount of oil, salt and pepper. Toss to coat.
In sauté pan, over medium-high heat, sauté shrimp until opaque in center, 6 to 8 minutes.
Set aside.
Zoodle Bowl
In sauté pan, over medium-high heat, heat oil. Add the following: garlic, zucchini noodles, grape tomatoes, and spinach.
Sauté until spinach is wilted and noodles are tender-crisp, 2 to 3 minutes.
Divide into bowls, add grilled shrimp, add broth.
