Roasted butternut squash tossed with extra virgin olive oil, lemon juice, honey, parsley and cumin.

  1. Preheat oven to 350 F.
  2. Toss butternut squash with oil and pepper.
  3. Bake until fork tender, 15-20 minutes, and allow to cool.
  4. Combine honey, lemon juice, oil, parsley, cumin and salt. Whisk to combine.
  5. Add butternut squash. Toss to coat.
