Beets
Sure, beets are great roasted on salads or steamed as a side dish. But have you ever had a Bistro Beet Burger? In this plant-forward sandwich, fresh shredded raw beets are blended with lentils, brown rice, and spices for a perfect patty that offers flavor, nutrition, and a definite “wow” factor!
Broccoli
A staple in so many kitchens, broccoli can be added to just about any meal for a pop of color and nutrition. Raw broccoli makes a great dipper. Stir-fried with other veggies, it makes a hearty meal. Or simmer it with onions, garlic, and vegetable broth and puree into this velvety Broccoli Soup.
Brussels Sprouts
A simple sauté of Brussels sprouts and sliced portobello mushrooms makes a standout supper served over barley spiced with harissa and topped with a bright green mash of jalapeños and peas.
