peeled, chopped

cider vinegar

brown sugar

yellow onion
trimmed, chopped

kosher salt

ground coriander

ground cloves

tsp
ground black pepper
Instructions
Steam cook beets until fork tender, 25 to 30 minutes.
In blender or food processor, combine all ingredients. Process until smooth.
Cover and store in refrigerator. Serve chilled.
