Beet Ketchup
From our Twisted Beet menu – beets, cider vinegar and seasoning blended to a smooth ketchup

Ingredients
- 2 1/2lbs red beetspeeled, chopped
- 2 1/2cup cider vinegar
- 1 1/4cup brown sugar
- 2ounces yellow oniontrimmed, chopped
- 1tsp kosher salt
- 1/2tsp ground coriander
- 1/2tsp ground cloves
- 1/4tsp ground black pepper
Instructions
- Steam cook beets until fork tender, 25 to 30 minutes.
- In blender or food processor, combine all ingredients. Process until smooth.
- Cover and store in refrigerator. Serve chilled.
